Sodium hydroxide is the basic salt of sodium, otherwise known as soda. It is an acidity regulator. It is used to obtain the desired degree of acidity in jams, or to regulate the pH in certain cereal-based preparations and baby food. This additive is also used in the manufacture of pretzels, to which it gives them a chestnut color and the typical taste of these products. E524 is considered safe by the health authorities and no Acceptable Daily Intake (ADI) has been set.
