Acacia gum is obtained from the stems and branches of acacia species. It consists mainly of polysaccharides. It is a thickener of medium intensity and a stabilizer used for example in foams or toppings. It also stabilizes flavours in powdered drinks or dehydrated soups. It is also used to prevent the crystallization of sugar in candied fruit or certain glazes. As with other gums, rare allergies have been observed. Similarly, gastrointestinal discomfort may be caused by heavy consumption or combined with other gums (bloating, flatulence, laxative effect). Finally, the use of E414 is prohibited in certain confectionery products because of a risk of choking, especially for children and the elderly.
