E327 Lactate de calcium

Calcium lactate is the calcium salt of lactic acid (E270). Of natural origin, it is an antioxidant. It also acts as an acidity regulator, humectant, emulsifier, thickener and firming agent. Its use is permitted in many foods. In general, lactic acid and its salts are metabolized without concern in the body and are considered safe.
