E1105 Lysozyme, Lysozyme chlorhydrateLysozyme is an enzyme naturally present in egg white. This enzyme has an antibacterial function. It is therefore used for the preservation of grated cheese or certain alcoholic beverages. During storage of these products, it prevents the growth of the bacterium Clostridium tyrobutyricum, which causes unwanted bubbles in the cheese. In some cases, people who are extremely allergic to eggs can develop an allergic reaction to lysozyme. It is advisable to check with an allergist whether lysozyme-treated cheeses can be consumed. European and international health authorities have not set an Acceptable Daily Intake (ADI) because lysozyme has been deemed safe at current use levels.
